Okay I did some searching and found some bits and pieces on storing a cake but I need an opinion from the more experienced cakers on this. So I made a baby shower cake, baked, frosted, covered in fondant and decorated all last night. The shower was to be at lunch time tomorrow so I was to deliver the cake today. Well the shower was moved to Friday at lunch now.
I wasn't as worried about the cake sitting until tomorrow afternoon but now it's going to sit another day. I used a doctored mix (the one with sour cream and pudding in it) so I think it'll stay moist, I frosted with my homemade buttercream (mostly butter) and then the fondant. Would it be best to keep the cake out on the counter or should I put it in the fridge to keep it fresher? I've put fondant cakes in the refrigerator before without issue as long as I don't touch it while it comes back to room temp. If it helps, the a/c is on at home but it's 80 during the days right now. Let me know what you think. Unfortunately I don't have time to make another cake because I have another cake I'm working on that is due Saturday (my first ever two in one week). So what do you think, fridge or counter?
