how far in advance can u make a wedding cake??????

i have a wedding cake due for April 7. My loving hubby just told me that he has booked a 7day cruise on for my 10th wedding Anniversary that leaves on April 1 and i wont be back until April 8. If i bake the cakes on Sat and Decorate them on Sunday do u think the cakes will still be fresh enough for the following Sat. Its a 4 tier almond flavor cakes all covered in fondant,stacked with the bling ribbon around the bottom. The florist will be putting a cascade of flowers on the cake the day of the wedding. WHAT DO U THINK.........

Personally, I would make the wedding cake and freeze it a week before your cruise..but to have it fully decorated and leave it in the fridge for a week..I would not recommend..

I think you have to put yourself in the bride's shoes. Would you want to pay good money for a cake that is over a week old? I know I wouldn't. I would rather find a different baker that could help you out and you go on your fabulous cruise than take a chance, do all the work and then have to refund her money when she complains.

Kudos to your thoughtful hubby on such a romantic present!!

Not a good plan. You can't sell a week old wedding cake.

Definitely not. Freeze it if you have to, but what are you going to do it something happens? The person that you trust to defrost and deliver doesn't do it/damages it/whatever?

No way in the world that cake will be good after a week. Tell her now so she can get another baker or reschedule your trip. If my husband "surprised me" like that I'd konk him over the head - when you have a business that requires your time is booked months in advance, you give up the whole aspect of "surprises" in your life.

I wouldn't risk making this, no way! You never know what life brings you(delays and etc) and if I were the bride, I wouldn't want to worry. It's cutting this too close for a brides BIG day..plus you may stress out while traveling for some reason..so relax, enjoy your vacation and give someone else to do this cake this time around. AND who wants a cake a week old?? Not me!

I know I have a Good friend that has offered to do it for me I bake the cakes Sun and she will thaw them thursday and finish the cake on Fri for Sat. I just never been presented with this kind of situation and TRUST ME it wont happen again

I bake from my home and my friend Has owned her Bakery for 10yrs so i trust them. Weddings r stressful enough i dnt want her to have to hope and pray someone would take her cake order so late and give her the quality that i would. My friend can and i know it but my cakes are my babies until they leave and and its not easy to give up creative control but she is reliable and she is very experienced.
