Looking For A Great Mud Cake Recipe

Hi Everyone-

I have never eaten- or made- a mud cake- I have heard great things about them on the threads- I am looking for a tried and treu- delicious recipe (in standard American measurements please).

I am hoping to make one for a party this Saturday- I have heard that it gets better after 3 to 4 days- plan on filling it with ganache-

Also- any ideas, other then the standard shamrock or pot-of-gold for a St. Patty's cake?? The people throwing the party are probably the funniest people I have ever met-- so pretty/elegant is probably not the way to go- ( Emma is from Dublin and her nickname is Lucky (for Lucky Charms-ha)--

I absolutely LOVE Pam's Chocolate Mudcake:

It's not written in "American" measurements, but I've already done the conversions, so here you go:
250g unsalted butter= 1.1 C
200 g dark chocolate= 7 oz (or 1.1 cups if you're using chocolate chips)--make sure to use a chocolate you like the taste of; a semi-sweet chocolate works really well (as opposed to milk or dark)
self-raising flour is self-rising flour; you can buy it in the states (I get mine at Wal-Mart), or you can substitute. In my notes, I wrote that I have substituted the 1 1/2 cups self raising flour with 1 1/3 cups AP flour, and 1 1/3 tsp baking powder and 1/3 tsp salt.
caster sugar is also superfine sugar. I use regular sugar with great results, but if you really want, you can throw regular sugar into the blender icon_wink.gif

20cm is about 8 inch; 150 degrees C is about 300 degrees F. Good luck! This cake takes a little longer to make than most, but it's totally worth it! Seriously the best cake I've EVER tasted!
