Does MMF Really Ever Go Bad?

Hey guys!

I made lots of MMF for my mother's birthday cake on Janury 6th. I have a lot leftover, but don't cake very often. I'd love to use it for Easter. Will it still be okay to consume?

I have each color separated in plastic wrap then sealed in a large ziplock, it's been stored in the pantry at room temperature.

All it is really is Marshmellows, Water and sSgar. I doubt it'll go bad in 3 months?

Whats' your take on this? It is just for my family.

Thanks!

I don't know if I would use it after all this time. There is still moisture in the bag, and I typically use the rule...where there is moisture...there can also be mold or bacteria. I wouldn't chance it. It's really not that expensive to make for the consequences it could cause. But for the next time...I freeze my marshmallow fondant all the time. I wrap it real well and when I want to use it, I just take it out of the freezer and let it thaw. After it thaws, I pop it in the microwave for about 30 seconds and knead it to a proper rolling consistency. If it seems a little dry, add a little Crisco to it. If it seems to moist, dust it with a little powdered sugar. I hope this helps you out.

It's probably OK. Sugar is a preservative after all and marshmallows...even when opened are stored in the pantry and not the refrigerator. If it smells good, looks good, and tastes good, then it most likely is good. I would be more concerned with it tasting stale than going 'bad'.

If I am ever on life support, unplug me...

Then plug me back in.  See if that works!

I would use it. Fondarific can be frozen for up to one year so I would go for it.
