Modeling Chocolate Question

I need to make some chocolate roses for a wedding cake. I have never used modeling chocolate. Can anyone tell me how far in advance I can make the roses? Do I store them in an air tight container? TIA.

You can make them as far ahead as you'd like. Store them in a cool place.

Don't store them in an air-tight container. A cardboard box would be a better option.

Yes, Store them in a cake box and they will be fine! Don't store them near a heat source too though..chocolate+heat= MELTING DISASTER (go ahead, ask me how I know LAMO!!!)
