Need the pure stuff.

I find lots of info on quality dutched powder - green & blacks, Valhona etc but not on undutched pure cocoa. Does this come in different quality, like some chocolate the variety, region etc.

Does the stuff from the health food shop any good as they seem to be banging on about the health benefits not the eating quality.

I dont mind forking out for good stuff.

ANyone help with with names?
