I need to make a 3 tier fondant cake with three different fillings for next Sunday. I have made the cakes and frozen them. How do I plan doing rest? What days should I do what? When can i cover the cakes in fondant? when should i stack them and when should i put decorations on them? Also what gives fondant smoother look? marzipan or buttercream?
would be grateful for any advice.

Hi there, if you have to make any decorations, do them now and keep them ready. I always cover the cakes in buttercream and I have covered some in marzipan as well. But I would go for marzipan to have a lovely smooth finish.

Take your cakes out on wednesday morning and leave them on your kitchen work top to come to room tempwerature with the wrappings on. Ones it nicely thawed, take the wrappers off, torte and fill them. I let them settle overnight. Thursday, cover them in marzipan. Let them crust. Friday, cover them in fondant, stack them and do the decorations. icon_smile.gif

I agree that if the decorations are going to be made of fondant, make those now so they have time to harden. I personally do the rest as close to the date needed to insure freshness. If I have a cake due on a Saturday, I bake the cakes Thursday night and while the cake is baking, I make my buttercream and fondant. Friday is when I start assembling and decorating...I start early enough so that if there's an issue, I have time to correct it without having stay up all night! Saturday all I have to do then is to take pictures of the cake and wait for pick-up or delivery. This routine just works for me, and has for years.
