What is the best cake recipe to use to make a giant cupcake using the wilton cupcake pan?

Any cake recipe works fine for this. I've been playing around with my giant cupcake pan over the last few weeks. The only recipe I have issues is with my carrot cake because it naturally sticks because of the nuts and brown sugar so I have to line the pan and the top with parchment paper so it doesn't stick. All other recipes do just fine.
