Here's my dilema:
I have been an "at home" cake decorator for many years and also an experienced Food Service Manager for going on 10 years. I am finally able to merge the two into a position where I manage a speciality coffee and bake shop. We do simple cupcakes, decorated Giant cookies, cookies and decorated sugar cookies. I have a staff of about 8 with half of these being persons with disabilities as we are a training program.
My problem is finding the best way to store all our pastry bags, couplers and tips without destroying them. It seems every time I reach into the box to get out a bag or tip they are smashed, put away wet or dirty or even lost in the process of cleaning. I don't have this problem at home since I'm basically the only one doing the clean up but it is awful at the store with several persons including those with disabilities doing multiple jobs on two shifts!
What are some of the creative ways everyone here stores their equipment? I've tried the simple Wilton tip boxes, which get easily broke. I've tried "tool-boxes" which items just get tossed into and smashed or disorganized. Help! How do others store their stuff??
