i need some help, I am trying to decide what size cakes I should make for a two tear cake to serve 40 people (25 adults, 15 children). I originally thought 8 & 10 but now I'm not sure because people cut cake slices on the large side. Suggestions please!

A 10" and a 6" would give you 50 servings according to the Wilton chart. Those are 1" x 2" x 4" slices - - if you cut larger pieces, those size tiers would probably work.

No, no,no... never think that way. There is an industry standard of how many servings each size cake yields. It matters not how big they cut it. You base pricing on the industry standard size of 1x2x4 per cut.
If they want more cake (bigger pieces) let them pay for it w/a bigger cake - and more money for you. You don't loose money because someone wants more cake per serving - you make money by giving them a bigger cake.
