6 cupcake quantities?

Hey,

Ok so at the risk of sounding like a thicko......

I want to make 6 cupcakes (muffin size), all the recipes are for around 12 depending on the case you use do i just halve everything??? yes i am new at this lol x

Hi Lollypop,
Are you doing scratch recipes or doctored boxed mix? If you're doing scratch I can't answer that because I know some scratch recipes don't scale well. If it's a doctored box mix, I do this ALL the time. It's simple with recipes like WASC. Some people measure and or weigh eggs but I don't. If half would be 1 and 1/2 eggs, I just add 2. Or I use the liquid egg whites which can be measured and halved. Boxed mixes are pretty forgiving. I've even quartered recipes before.

Whether it's scratch or mix, you can use whatever quantity you need and freeze the rest. It will keep for several weeks. You can defrost in the fridge or use it frozen. See - - no problem. icon_wink.gif

Hi Lollypop,
I half recipes all the time for scratch cakes, especially if I want to make a smaller cake. You will have the best luck if you weigh all the ingredients. For eggs you can beat one egg, measure it and then go from there.

Yes I use scratch recipes, thanks for your help guys! I like the idea of freezing mixture that would be a time saver!

Does it make the cakes made using the frozen mix taste differently?

I've never heard of anyone getting a different taste - - works just like fresh batter. Of course, you need to freeze it in an airtight container but that's just common sense.
