This may seem like a silly question but I am new to decorating but normally use basic recipes. I have a customer that has ordered Lemon cake with lemon filling. Most of the filling recipes on here have whipped cream in the recipe. I am making a cake shaped like an artists palette, which will be covered in fondant. I'm unsure of what to do because the fondant cant be refrigerated but if it has whipping cream in the filling then it will need to be right? Please help. Thank you.
I'm calling BS on the "new to decorating" line, yeah right! You have, like, 6 pages or something of cake photos... and your cakes are really good!
"Most" fillings do not have whipped cream in them. Whipped cream is perishable, breaks down fondant, and breaks down itself. Most fillings are buttrcreams with flavoring added, jams/preserves, or curds.
Either make a lemon buttercream (buttercream with lemon extract), make a lemon curd, or mix the 2 together. Debatable weather curds need refrigeration, call your HD.
Good luck!
I guess I meant new to baking. I normally use box mixes with pudding mixes added and have only used buttercream for filling
Thanks for the compliments though.
And thanks for the tip. I will try the flavored butter cream idea
