I'm looking for some advice on brands of cake pans. I've been making small two and three tier cakes, and don't like the pans I've been using. Which brands have other people had success with?
I've been using lightweight aluminum pans from both Wilton and Fat Daddio's, and both seem to have issues with sticking - no matter what coating I use. My bigger, heavier cake pan that isn't name brand (Wal-Mart special) never has issues with sticking.
I love my Magic Line pans! I have both round and square. Bake evenly with no dome. I've tried Wilton and Calphalon and like the Magic Line better.
Try this for you pan coating. I've never had a problem with sticking no matter which pans I used.
1c shortening
1c flour
1/2c oil
Mix together in mixer until well blended and fluffy. Apply to pans with pastry brush. Can be stored at room temp but if your area is a hot climate you may want to store it in the refrigerator.
No matter what type of pans I use I never have a sticking problem because I line the bottom of each pan with square or rounds of higher quality waxed paper (CutRight)
I use Fat Daddios and have no problem with sticking unless it's my chocolate cake...then I line the bottom with parchment paper and I'm good to go. I always crisco then flour then I spray the whole thing again with Pam to make sure the cake won't stick. Except for the chocolate it works! I have one Magic Line pan and it is awesome...but I've already invested so much in my Fat Daddio's pans I will use those and buy Magic Line here and there.
magic line without a doubt. no dome so you dont have to level off much at all so u use most of the cake. my wilton and fat daddio are moving into storage
