Need Help! Problems With Pudding Mix Cupcake

Hi,

I added vanilla pudding mix to my cupcake batter for the 1st time, the texture turns out great, it's moist and soft. (even on the next day). But I found there are some yellow dots and red dots in the cupcake, I tried the same recipe twice and the result is the same. What is it??
Also any other problem is that the cupcake is flat if I use the wilton paper cup but it turns out with a nice dome if i use foil baking cup. I want cupcake with nice dome like Sprinkle's Cupcake, how can I do that?

here is the recipe i used for 6 cupcake.

unsalted butter 50g
cake flour 74g (3/4 cups minus 1 tlb sp)
vanilla pudding mix 8g (1 tlb sp)
baking powder 1 tsp
salt 1/4 tsp
sugar 100g
egg white 53g
milk 80g
vanilla 1/2 tsp

this recipe follow the high ratio method and i baked at 365F coz mine is not convection oven!

I don't really see much of a difference between the two in terms of rising. Could it be the amount of batter you put? Try increasing the amount because it will have no where to go but up but I'm not an expert. If you are going to pipe your icing then it won't be noticed anyways. As for the different colours...I'd say unmixed batter but where does the red come from...no idea. My vanilla cupcakes never rise much either.
