Hi! I have to make mmf black. Do I make a chocolate MMF as I would for buttercream or do I dye it brown and then black? I need a large quantity to cover a whale cake.

add melted candy melts in dark brown or black to your melted marshmallows. It'll take a lot less of the black coloring to get it black and the workability is great. I have a tutorial on my blog. Anytime I need dark colors, I use the candy melt method.
I agree that the candy melt method works great. I would also start with chocolate MMF - just sub in some cocoa for an equal amount of powdered sugar (1/4-1/2 cup).
I add a generous dose of Super black Americolor gel to the melted MM's. Just a healthy squirt or two. Looks charcoal grey until it rests, then turns deep black.
