Hi, Im having a baby shower on saturday. The cake Im doing is four "baby blocks" all different flavors and i only have two pans to bake in so I have to back the cakes tues and weds so that I can fill and decorate friday. Thursday I have other things that I need to make. What would be the best way to keep the cakes fresh for saturday? Freeze and thaw, Refridgerate, Just place in airtight containers? The fillings for the cakes will need to be refridgerated so im not sure how to crumb coat either since I wasnt planning on filling and stacking till friday? Any Help would be greatly appreciated....TIA

I would freeze and thaw. I'd bake and fill and maybe even crumb coat or final buttercream coat if you're going to put fondant over it (bottom line not final-final ice so you don't mess it up) and then freeze to solidify then wrap well is plastic. Put in fridge early Friday, finish them later in the day, and serve on Saturday.
