I am making a cake that I am filling with layers of fresh mango filling and also a layer of mango mousse. Does anyone have a reliable recipe for mango mousse that will hold up in a layer cake. The cake will also be covered with fondant.

Thanks! This cake is due February 4th so any quick feedback is appreciated!

The recipe and instructions on this page are great. http://www.joepastry.com/2011/making-mango-mousse/
As for making it into a layer filling, the best way is to put it into a cake pan the size of your layer and chill it until it firms up, then slip in on to the layer, then add the next. If you can stack your layers and filling in a spring form pan like a mold, and chill that all together over night or for a few hours, it will be even better!
