I had a cupcake order yesterday and had a lot of left over batter, so instead of wasting it I went ahead and baked up some cakes knowing I have my daughter's birthday cake to make tomorrow. I forgot to put them in the freezer last night. They are still in the pans and sealed in tupperware. . .should I just leave them there until tomorow when I decorate, or should I go ahead and put them in the freezer for today and thaw out tomorrow. The cake will not actually be eaten until Sunday. What's the best way to keep these cakes fresh?? I checked them this morning and they are still fluffy and moist. . just not sure what to do wtih them over the next 24 hours. . once covered with fondant tomorrow I am not too concerned about them.
Or do you think I should just start over tomorrow and bake a new cake?
