I was asked to do a cake for my friend who is making the adoption official for her daughter next month. They have had her since birth and she will be 3 in April any suggestions are greatly appreciated. I am just lost with what to do for the cake as she is not a baby anymore and because she has been part of their family since birth. Also I need to have a good recipe for a chocolate cake with no eggs as their son is allegic to them. I would like to use applesauce to substitute.

I am at work- but will post my chocolate cake recipe tonight- it is amazing- uses no eggs- I don't even use another chocolate cake recipe - since this one is so yummy and works perfect every time!- If I forget though, send me a message!

1 1/2 c. flour
1 1/2 c. cake flour
2 c sugar
1/2 c. cocoa powder
2 tsp baking powder
1 tsp salt

2 cups hot water
3/4 cup vegetable oil
2 tbsp distilled white vinegar
1 tbsp instant coffee granules
1 tbsp vanilla extract

Preheat oven to 350. Grease 2 8 inch pans.
Sift and whisk together flour, sugar, cocoa, baking soda, and salt in a large mixing bowl.
Combine hot water, oil, vinegar, instant coffee, and vanilla in a large mixing bowl.
Add to the dry ingredients and whisk just until combined. Immediately divide batter between pans, and bake about 30-45 minutes.

This recipe is delicious- doesn't have a coffee taste- moist and incredible every time I bake it- it is my go to recipe for chocolate, as I have never had a problem with it, and it is very cheap and easy to make- no mixer required!

Ok....just throwing my brainstorming out here of a few ideas.........
One or two special family photos as edible image on the cake.
and/or
Someway to represent a timeline of their journey to adoption. (some baby items, how they celebrated each milestone birthday, vacations or special trips or events)
If the child is taking their last name, I would put that on the cake somewhere.

Just my random thought. HTH.

Thanks so much for all your help I will definately try that recipe and let you know. I also came up with a good quote about adoption that I am going to put on a fondant scroll with gelatin flowers.
