Have you ever done a topsy turvy before? Because it is not easy. And one that big...wow! Pardon my pessimism but I had a wedding caketastrophe with a topsy-turvy last summer and I can tell you this...It will be heavier, bigger and take longer than you ever thought possible. That being said, if you're still intent on doing this, practice. And practice with real cake...maybe smaller sizes, but get used to what it's going to take to put together.

A good support system is imperative and be sure to allow for plenty of time. If you can stack at the venue, so much the better because transporting a fully tiered cake was what killed me (that and 108 degree temps). But I had to because I couldn't stack at the venue. I will encourage you to do a simple design too. Pricing to me is based on not only the degree of difficulty but one's skillset as well. To me a base price on a topsy turvy would start at $5 per serving and go up accordingly.

I can't necessarily tell you how to do one...but I can sure tell you what NOT to do! Good luck!
