Is It Better To Refrigerate Or Freeze A Decorated Cake?

I made a cake for a friend's baby shower that was scheduled for this past Saturday, but was cancelled at the last minute due to snow Sad It's been rescheduled for this coming Sunday - a little over a week since I made it. Making a new cake is out of the question, so my question is, which is best: to refrigerate it or freeze it (as is)? I've never frozen a decorated cake before, so I'm very clueless Smile It's a pound cake with a cream cheese buttercream filling and icing. If she froze it, would the icing be messed up when it "defrosts"? All of the decorations are made of fondant and gumpaste...I've never frozen them before. Thanks!

Personally I'd risk the freezer, because that will preserve the cake more. A lot of people say the freezer as moisture, while the fridge dries a cake out.

Put it in a cake box, wrap it well with plastic wrap and put it in the freezer. When you remove it, keep it wrapped while it thaws, then all the condensation will form on the outside of the box, not on the cake.

Your cake is really cute, but in the future, I would cover the card board with something. There are many suggestion on the board here. icon_smile.gif

I had my husband a retirement/birthday party and had half a sheet cake left , i wrapped it really good and stuck it in the freezer then a couple weeks later i pulled it out and let it defrost i unwrapped it first and stuck it into the cake box and let it unthaw and it was as good as the first time i baked it. Hope that helps
