I need to know what size do you normaly use to make a # 40 cake. what size pan do I use for each # and how many servings would I get from this type of cake..

Depending on how many servings you need, make them bigger or smaller. Start with pans slightly bigger than the number of servings you need, then sketch out your numbers on paper to the size of the pan and cut them out.

Then when you have the cake baked, you can just use the paper numbers as a template. I always err on the side of ending up with more servings than absolutely needed, rather than promise a certain number and come up short.
