Selling At Booth Exp Pls?

I have an opportunity to sell cupcakes at a booth. The estimated traffic at the event is 500+ ppl, but it's the first event of this type so they're not exactly sure. How many would you think I'd need to make?

I would luv for someone with market feedback to reply. I will be posting this myself come summer and it is Farmer's Market time. I plan on also selling at the local expo's and events our town holds. The amount to prepare still eludes me.

Need more information:

* How many other booths have food? Are there other food sources (e.g. restaurants, café, grocery store) nearby?
* Do you have the exclusive on cupcakes? on desserts?
* Will you be offering anything other than cupcakes?
* How many hours will you be open? and for how many days?

Note: Number of people through the door does not equal number of people waving money at your table. We were at one art & craft sale this summer where many visitors told us, "but I didn't bring any money!" and you had to make a special trip to get to the center, it wasn't an event you could just happen upon (like a garage sale).
