Buttercream flavoring.

I have a friends who's getting married in August, and asked me if I would do 200 cupcakes and the cake topper. She just wants the cupcakes half white and half chocolate. For the icing she wants a cranberry color for the icing. My question is, what flavor could I use for the icing. I don't just want the plain old "vanilla". And can you use liquor as a flavor?

You can use liquor, extracts, coffee creamer (liquid form or powder form), citrus rind zest, juice...

Wow that's a lot of food color!

You could do any flavor of buttercream. Most flavors work well with either vanilla or chocolate. You could do almond, orange extract (or Grand Marnier), raspberry (I would use Chambord), Creme de Cacao, etc.

Never underestimate plain old vanilla. Get some high quality extract and pair it with some vanilla bean paste and it is very delicious and far from ordinary. I love seeing the flecks of vanilla seeds all throughout the icing.
