I Need Help With Buttercream Please

So I am learning alot on my own, but this buttercream is giving me a hard time. This is the recipe I use, 3 cups p/s, 8 oz unsalted butter, 1 tsp salt, 1tbsp vanilla, 2 tbsp milk. This recipe is really sweet. It does ok, but it melts or just gets to soft so fast! I tried to make it look like fondant the other day and it was horrible!!! It was soft, had bubbles in it and the cake was ruined! icon_sad.gif
Please tell me where I can find a good BC, that holds up, is good and not to sweet! I really want to get the icing to look like fondant.

Hi there, I use a recipe that has 4 cups of icing sugar, 1 cup unsalted butter, 1 tbsp of meringue powder (optional but makes icing fluffy), 1/2 tsp of vanilla, and 3-4 tbsp of water depending on how thick you want it. Even with the 4 cups of icing sugar it still isn't too sweet. Once it is spread on a cake leave it for about 15-20 mins til it forms a crust and then smooth it with a paper towel or waxed paper. Gives it a smooth fondant look everytime! Good luck!

Butter has a low melting point and makes it difficult to maintain in higher temperatures. You might have to consider using equal parts high ratio shortening with butter. It holds its form longer than just using plain butter. Don't omit the butter and use only shortening otherwise you will have Sam's Club quality decorators frosting. Though both rolled fondant and decorators frosting have confectioners sugar in it, they do not have the same consistency. Fondant has gelatin and glucose/corn syrup in it to give it elasticity to make it more pliable. If your looking for a smooth look with frosting. try to smooth it out the best you can when frosting your cake. Since this particular frosting forms a crust. Wait until it dries, and try the Viva paper towel method. You can find that method all over the forums.
Indydebi's is a pretty simple sturdy recipe. Give it a try. icon_biggrin.gif

Try Roland Winbecklers recipe go to cakesuppliesplus .com scroll down to cake tutorials/recipes-free it's the creamed buttercream recipe make sure you follow the mixing instructions you can watch the video that shows you how.So far it's the best that i have tried.
