I have been asked to quote this cake. It is for 100-125 people and will be white with buttercream icing and fondant and the flowers. I am thinking I will only need the three tiers and not the cakes around the tiered cake! This is alot of fondant and I make my own. I have no idea what to charge for the flowers. I am in Indiana. Given my pricing scheme, I'd charge around $650 for this cake. Just the three tiers. This wouldn't include the topper figurine or delivery/setup.

Thank you for getting back with me Baked Alaska! I guess my question would be what is your pricing if you don't mind me asking. I make my own buttercream marshmallow fondant and use cake mixes for cake at $1.25 a cake mix.
I am thinking Indiana pricing would be a little less than Alaska!

I would go with $5/piece (at least for my area). That's alot of flowers. If it were just fondant and few flowers, I'd probably go in at $4/piece. So that would be $500-$625. That doesn't include the topper or delivery.
That cake serves 188, based on wilton's servings, with just the 3 tiers. 8, 12, 16in cakes, based on the instructions. At $4 a serving that would be $752, not including the topper or delivery.
I would do a 14, 10 & 8 serving 120. Using my pricing structure (and I am in Minnesota) Fondant, basic (non-upgraded) cake flavor and buttercream filling would be $5.00 p/serving plus 60 hand created (very small) roses, leaves and vines @ $95.00 plus $15 supports and bases for a quoted total of $710.00. This would not include delivery and setup or the topper.
What generally is the delivery and setup fee? I normally don't charge for this but if I had some idea that would be great.

Your delivery fee can be based on mileage or time or a flat rate. It is up to you. I usually just do a flat rate. Where I live I can bake out of my home, but I am not allowed to have retail traffic. So I have a location near by that I take all my cakes to and have people meet me there. I do not charge for that, but if you want me to take it to a venue I within a certain distance I just charge $10 to cover my gas and time.
Set up depends on how long it will take me to set it up. Again, you can charge by the number of tiers, the estimated time to set it up, or a flat rate.
