As the title says, the temperature on my stove refuses to go past 220.. And i dont understand why. I am using the right size pot, and my thermometer seems to be fine, so i dont understand why i can get the syrup to get past the thread stage.. help?

I'm pretty sure that, despite appearances, your thermostat isn't fine and probably needs to be checked out by a professional. There may be a problem with the gas and air mix that's not giving you a hot enough flame. I'm really no expert on stovetops, but I had to put a thermometer in my oven, because it wasn't heating anything like it said on the oven control. Life has been SO much simpler since then! I wish you luck in finding out what the problem is.

i was having this same problem, forst i thought it was my thermometer so i got a new one, then i thought it was my stove, but then i decided to put my mixture in a smaller pan, which made the depth of the sugar higher, i realized that even though my thermometer was situated in the middle of the sugar, the thermometer was still too close to the top of the mixture, iy needs to be submurged like 2 inches.. once i put it in a smaller pan and the thermometer was covered appropriately it worked just fine..
