You may want to look into paleo baking, paleo products have no grains, legumes, dairy products, salt, or refined sugar.

Here is one recipe:

I have made this before (without the glaze, I just used spiced applesauce) and it was really nice. It may not be low in the things you are looking for but it is pretty healthy and adding raisins to the batter would be good..

The spice cake sounds easy and yummy! I"ll try that! Anyone else have any recommendations or has tried?? Glucose free or anything healthier than the original? It doesn't have to be free of anything ingredients specifically..just suggestions for a healthier dessert/cake/cupcakes? THanks!!

I think the idea of "healthy" cake is an oxymoron. Use best natural ingredients ( flour, sugar, fresh eggs and real butter) and avoid corn syrups, Crisco, etc and you will have an amazing cake that is meant to be eaten in moderation, not as a regular part of ones diet.
Your health should be maintained by the other foods you eat. Remember the 80/20 rule. If you eat healthy 80% of the time, you can splurge 20% of the time (ie cake! icon_biggrin.gif )
