Diabetic Cake Recipe

Hey everyone,

I am in need of some help, in another post I stated that I was making a wedding cake for a friend next year, however, the grooms mother is a diabetic, I was wondering if any of you have an amazing recipe for diabetic cake also I was wanting to decorate it nicely maybe with some type of butter cream or something? (with the sweetener, would that even work?) as she didn't feel left out in regards to pretty-ness on the actual cake icon_smile.gif the only thing that I have in regards to ingredients is a sweetener that is from The Netherlands ( that is where they are from and that is the sweetener that his mum uses) if any of you have any recipes I would very much be appreciated as I have attempted to look all over and I just find it hard.

I have tried and failed with many diabetic cake recipes. They do not rise at all like a regular cake. I would never do an entire wedding cake sugar free but make the groom's mother her special own cake to sit next to the wedding cake...if that wouldn't embarass her. I would highly recommend you try the recipe first in the small version it was intended for and see for yourself before committing to a full blown wedding cake. My opinion. thank you for your response, yes she will be having her own little cake icon_biggrin.gif (sorry I didn't explain that fully) I don't know her but i think she will be pleased with it icon_smile.gif I think i will attempt the recipe first and see how it turns out and then I will go from there, definitely if I find a great recipe I will for sure post it =)
