Isomalt help please!!!!

I'm working with isomalt for the first time, but I just noticed that my thermometer is not reading accurate...does anyone knows for about how long should I cook isomalt?? is been boiling for about 10mnts now...I'm trying to make sugar bottles for a cake tomorrow.

Is the thermometer out by a couple of degrees or not working altogether? If it's just by a couple of degrees still use it as some accuracy is better than none at all. How much are you making as timing depends on the quantity of isomalt you are heating.

Thank you so much for answering Lisa...well, I think is not working because, at this point, it's been boiling for about 20 mnts and it's not going over 200 degrees...I'm making 3 cups of isomalt. Do you know if there's a way to check isomalt without the thermometer??

Sorry to respond late, how did it go? Even when I make small quantities it can take half an hour + to get to the right temp.

No worries Lisa, thanks a lot for your help. Well, yes you're right!! it took about 1/2 an hour!! it was my first time working with isomalt so I started to panic when I noticed the thermometer wouldn't move. Eventually it did but I still think is a little bit off since I brought it to 330 degrees which according to Dominique, from MYOM, that should give you clear isomalt and mine turned slightly amber color icon_sad.gif
Oh well, I'll give it another try tonight and allow more time---I stayed up till 1am and had to be up at 5am this morning for work aggghh icon_cry.gif darn isomalt!! LOL icon_biggrin.gif
Thanks again Lisa, now I have a better idea of how long it takes..for some reason I thought it was something that takes 5-10mnts icon_biggrin.gif

Try using bottled distilled water instead of tap water as there are less minerals which can cause some of the discolouration and make sure your pan is completely clean as any residue could burn and cause the amber colour.
