cutting cookies after baking? Answer needed ASAP!

I am making NFSC that are spreading like mad. After they come out of the oven, has anyone reused the cookie cutter and "trimmed" off the spreading areas? I don't know if this would make the cookies go stale or not?

I haven't tried it myself but I've seen 1 or 2 of the amazing cookie decorators on here say they have done it. HTH

It can definitely be done with sugar cookies. I have only re-cut gingerbread cookies and shapes for gingerbread houses (I always do because you need straight lines). As long as you have time to cut them all while they are soft.

Is this the first time you are trying the NFSC recipe? Before you bake more cookies, could you add a little bit of flour in the rest of of dough? Also, you can chill your cookies before placing them in the oven.

I wonder how the nfsc were able to spread so much. I know there have been debates about the flavor (issues with tasting too much flour) but I've never heard of it spreading before.

I do that all the time. I do chill my cut cookies (not on the cookie sheet!) before I put them in the oven, then after 8 minutes recut if necessary.

I make sure my dough is firm when I'm finished mixing and if it's not, I add more flour. Then after I cut out the chilled dough, I lay the cutouts on the cookie sheet I'll be baking them on and put it in the freezer for at least 15 minutes. I have very little spreading to deal with.

yes i have done it. dont do it as soon as they come out, let them cool a little but cut while still slightly warm to get the cleanest cut.

Thank you for all the answers. I did cut some right after they came out of the oven. The cut's were not the cleanest, but they worked. I can't believe the cookies spread that much. My dough was very hard, in fact it had been in the freezer for weeks, and only out on the counter long enough for me to be able to push the cutter down into it. I'm having problems all the time with my cookies spreading anymore. It is very discouraging to me, cause I do love the look of nice clean sharp edged cookies. Maybe next time I will cut after I let them cool a few minutes.
