Fondant Over Ganache...

for those of you who ganache before covering in fondant, do you do this with every cake? Do you inform the client your are going to do this?

An Australian thing to do - yes ganache under sugarpaste especially mudcake .. but defintely not fruitcake

?? - they would be more surprised to find buttercream under sugarpaste - an American thing to do ...

When discussing the cake covering, don't you explain exactly what is used ? most decorators offer dark chocolate-, milk chocolate-, or white chocolate ganache, depending on the cake. The customer chooses ..

So far I've only done fondant over ganache for customers, as BC isn't that stable to be underneath fondant (where I live).

When discussing their cakes, if ths customer requested a fondant cake, I would go on explaining then there would be ganache underneath (so far no oppositions yet from my customers -- I guess I just never had fussy ones ha ha).

I only do ganache under fondant, most clients love it. I do let them know and every once and awhile I get someone, that would prefer buttercream, so I will switch for them.
