How Far In Advance Can You Make Your Cookie Dough?

I'm going out of town from Friday 12/16 through Sunday 12/18 and getting home close to midnight at that.

I'm baking a lot of Christmas cookies when I get back and am trying to schedule my time so I can get them all in without being stressed. I have the whole week off work, so it shouldn't be too stressful.

But since I am making so much, it would be nice to have dough ready to start baking as soon as I wake up Monday.

How far in advance can I make my dough and store it in the fridge?

I guess I'm more concerned about my sugar cookies - as these are likely the most time consuming for me (cutting out shapes and icing them), I'd like to get these done Monday. The dough already has to be refrigerated. Would Wednesday or Thursday be too early to make the dough for Monday? Wednesday would be ideal as Thursday I will be getting everything ready for flying out very early Friday morning & my dad will be in town. But if Thursday is really the earliest I can do this, I really only have the morning to do so or very late evening.

As far as next week goes, I'd like to at least have my dough ready the night before.

So really I guess, for sugar cookies, how far in advance can you have your cookie dough made?

I've made my sugar cookie dough and frozen it..Then I just take it out the night before...You can make it anytime and freeze.

Do you take it out and place in on the counter or do you put it in the fridge to thaw?

Also since the sugar cookie dough needs chilled prior to rolling/cutting, would this need re-chilled after taking out (if placing on counter overnight)?

I kept mine in the fridge to keep it cold to roll out.
