Can anyone tell me how to make chocolate mmf, or if it can be made and still hold up? Thanks!!
I make chocolate MMF particularly when I need to make a dark brown colour or black bc they both use so much colouring. I melt some dark chocolate and add it to the mix. I used to add cocoa but found it made the MMF very dry and crumbly so switched to chocolate and it works a dream and tastes delicious. HTH
How much melted chocolate do you use? I have tried the cocoa with the same result....dry and gross.
Not sure how much chocolate I melt, I just melt some, probably one bar and pour it into the mix. Obviously the MMF then becomes more liquid so you'll have to add more icing sugar plus some brown or black colouring depending on what colour you are going for.
I don't suggest melting chocolate morsels and putting it in the marshmallow fondant. I just tried a recipe i found on here for true black MMF a couple days ago using that and it came out awful!! With all the kneading that you do the heat from your hands keeps the chocolate gooey. I added a ridiculous amount of powdered sugar and it didn't help at all. I let it sit over night like I was supposed to but as soon as I started working with it again super gooey! Every time I rolled it out and tried to pick it up it tore, stuck to me, stuck to the rolling pin, and stuck to itself. I know other people are suggesting not to use cocoa powder but next time I totally will. I've read many places to solve the crumbling problem to just add some corn syrup (not water). I say give that a try first.
One really easy way to do Chocolate MMF is to use the Chocolate Marshmallows. It is fine like that. That is what I do. If that isn't quite dark and rich enough, then you can add 1 oz. semi- or bittersweet chocolate and 1 Tbsp of cocoa. Just melt the chocolate and stir the melted chocolate in with the marshmallows before adding it to the sugar and sift the cocoa with the sugar before mixing the marshmallows. I actually like my Chocolate MMF better than the regular.
