any tips on torting evenly without using the wilton leveler or anything thanks for all the help

There are a few different ways to torte without the tools. One is to place toothpicks around the cake where you want to torte and use them as a guide for your knife. You can also score a line with the knife all the way around and then carefully follow that as you cut through. I also saw a tip regarding leveling cakes where one of the bakers here at CC put cake boards in her pan enough to lift it up and levels off the top that way. You could put enough cake boards in to raise it up half way and torte across using the top of the cake pan as a guide. Anyway you go, I definitely recommend having a knife that's bigger than your cake so you can saw through the whole thing.

I would run right out and get an AGBAY leveler and never have this problem again. During one ICES meeting I watched a woman wrap a new length of dental floss around a cake (evenly) and pull tightly to torte. Worked great.

I have never had any luck with any of the levelers anyway (not counting the agbay of course which is out of my league). I typically do the toothpick technique or the knife scoring with a ruler. I have also used unwaxed dental floss, but in combination with the toothpicks to make sure it didn't slip. I was amazed at how well it worked. If you don't have a knife longer than your cake layer, I suggest going with the dental floss. icon_smile.gif

I saw on here once a lady that used two pvc pipes of 1" each I think it was on either side of the cake and used that as a guide for her knife. I haven't tried it, but it sounds good.

I made this video because this was the only method I could think of to level or tort cakes without the expense of the Agbay. Even the fold-out Wilton leveler was terrible. Hope it helps.
