Hi all! I usually just use box mix when doing cakes but I have a customer that is wanting a more dense cake much like pound cake. I found the recipe for "Durable Cake for 3D and Wedding Cakes" here on CC and was wondering if the texture is more like pound cake?? I have listed the recipe below. thanks for your help and Happy Thanksgiving to everyone icon_wink.gif


Durable Cake for 3D and Wedding Cakes
Ingredients

1 Duncan Hines Yellow (or White) cake mix
4 egg whites
1/2 cup water
1/3 cup vegetable oil
1 small pkg of instant vanilla pudding mix
1 cup sour cream

I would say that it is pretty close to, but not quite, the texture of pound cake. It's been a while since I've made it, but if I remember right, the cake is quite dense but more moist than a pound cake. HTH

Thank you for your help! I think I will try it! I have to make a cake this weekend for a family member so I will try this recipe for that cake and see if I like it.

I use a doctored white cake mix that is fabulous. It is also great for varied flavors by adding icing fruits, flavorings, spices, etc. It is almost foolproof.

This recipe is very dependable, consistent, tasty, & durable enough to stack and carve. It also makes lovely cupcakes. You can use gel colors to color the batter. This is a version of a cake recipe from the book: The Cake Mix Doctor, by Anne Byrn, ISBN: 0761117199. [EVERY baker should own this book!]

Sour Cream White Cake
1 package (18.25 oz.) Duncan Hines white cake mix
1 cup sour cream
1/2 cup canola oil
3 large eggs
1 teaspoon pure almond (you can also used vanilla, lemon, etc.) extract
