Anyone Use Fresh Apples In Their Cakes?

I want to make the Apple Pie cake but I don't want to use apple pie filling in a can. Here is my plan.

Bake this as a single 9 inch layer.

Make my own apple pie filling which is fresh apples , spices and a little sugar.
Place yellow cake (possibly the apple cide cake) in the bottom of the pan and then layer the apple pie filling on top of the cake. Then bake.

I'm hoping it works out a little like a pineapple upside down cake but right side up.

My questions are:
Am I crazy to bake it this way?
Will the apples be tender by the time the cake is cooked?
Should I saute the apple mixture before putting it on the batter?
Will the apples totally screw up the moisture level in the cake?

I know I have to try it, which I will be doing tonight but I'm hoping to learn from other people's experiences before I have to trash a cakeicon_smile.gif

I used apples once in my carrot cake. I didn't have enough carrots, so I used a couple of shredded apples and instead of the spice mixture I use for carrot cake, I used the spice mixture I use for apple pie. It was good.

Great thanks. Maybe I should slice them thin or dice them instead of doing them regular apple pie thickness.

If you're concerned about the apples cooking completely, just grate them. icon_smile.gif

The way I'm doing it I want it to look like an apple pie on top with the sliced apples baked into the top of the cake. I'm not currently planning on mixing them into the batter.

Whatever batter you use for the cake has to be dense enough to hold the weight of the apples.
Sounds yummy!

I have an old family apple cake recipe where you use green apples, peeled and sliced, then place them in a bowl with cinnamon and sugar, stir let stand 30 minutes, stirring occasionally, then you coat baking pan with bakers spray, layer the apples in the bottom then pour in white cake batter...bake at 350 for 30 minutes for an 8 inch pan. recipe says you can add cinnamon and a little pinch of nutmeg to cake batter. I just made a caramel apple cake for thanksgiving...it was perfection....hope this helps

Some put just a bit of batter on the bottom, then layer the apples...it depends on the person and recipe....good luck!!! thumbs_up.gif

Well it worked and not to toot my own horn but it was Awesomeness! I made the Apple Cider cake recipe here on CC, and like the above poster mentioned I sliced granny smith apples tossed them in cinnamon, brown sugar and a hint of nutmeg. I poured the batter in a ceramic pie plate and layered the apples on top. I accidentally added a bit too much batter so I had a wee bit of over flow. Once cooked it looke like an apple pie. I served it with fresh cinnamon whipped cream and it was crazy yummy. Thanks everyone for all your ideas.

King Arthur Flour has a good apple upside down cake recipe that is just as you described. I've made it before, adding a little ginger and nutmeg to their recipe, and it was delicious. I also have my own apple spice cake recipe in which I add finely diced fresh apples to the batter. I've never had a problem with them cooking through with the cake, but I always dice them to fairly small pieces. Good luck and have fun with it!
