I'm doing a cake for a friend who requested flavors of chocolate and peppermint (like a candy cane). She doesn't care if its flavored cake or filling etc... I was thinking doing a chocolate cake with some sort of candy cane filling but I'm drawing a blank. Anyone have any suggestions?
Oh yes! The finely crushed candy canes are fantastic in buttercream! I get mine from my local Bulk Barn. It tastes just like a candy cane when I mix it in!
You can also use some star mint candies, crush them in your food processor until they are a fine powder with very small chunks, mix in some red sugar crystals, then use this to coat the outside of your cake. I did this recently with some cake pops and they were very yummy! This would look really good on a chocolate cake with a vanilla buttercream then the candy/sugar coat on the outside.
This time of year Andes mints also come in peppermint. Someone brought a cake to work with the regular Andes mint flavored icing. It was good.

Andes has out their Peppermint Crunch baking chips now. i used them last year to make a truffle-like filling with them and used it in a couple of cakes and it was awesome! I can't wait to make some more this year.

Did you just use a truffle filling recipe and substitue the peppermint baking chips for the chocolate?
