Working With Fondant On A Chilled Cake?

I'm going to try to make this cake. I kind of have an idea how to cut out the pieces but was wondering if I should apply the fondant pieces to a chilled cake?
I don't work with fondant that much but understand that it can form condensation on the fondant as it comes to room temp.
Any tips on creating this cake would be appreciate.

I feel like to keep this clean look, I would put a layer of fondant on the cake first, then use thinner fondant for all of the cutouts and adhere to the first layer of fondant. I feel like it could get messy on buttercream, whether it's chilled or not.
If you refer to the feedback below the cake picture. The designer explained on Feb 24, 2007 how they did it. Also, consider sending them a private message for assistance it that info is not enough. It appears they put a layer of fondant then addd the cutouts as Bakingkat said as well.
