Is there any way to make really clear sugar gems? I have used a basic recipe with sugar and corn syrup and heated the sugar to 275 but the sugar turned yellow. How could I make them crystal clear? Could corn syrup make the final sugar color yellow? help please....
Use Isomalt. It stays clear. You can buy it online at Amazon, sugar craft or Global Sugar Art. Some cake supply stores carry it too. It comes in crystal form or sticks. You add some water and melt it like sugar.

No the corn syrup didn't do it. It's the sugar and water. I only use isomalt if I want crystal clear or a true color. If it's just something small...I use Jolly Ranchers. That's what I'm doing for my grandson's
