Can someone please respond to me soon about why my royal icing is dense and shiny? I can't decide whether to add more water or albumen in.

How long did you mix it?

The longer you mix it the more it will fluff and will loose the shine.

Ditto to both of the above posts. I mix my royal icing for 7-10 minutes in my stand mixer but if there was any kind of grease in the bowl or on the mixer attachment, the icing will go glossy and won't hold its shape when piped. I always wipe everything with vinegar before making my royal icing because even residue on clean dishes (or storage containers) can ruin royal icing.
