What To Do With Left Over Cakes From Carving????

Hello everyone,
I seem to have read somewhere on this site about someone keeping all there cake left overs from carving and doing something with them. For some reason I seem to remember something about petit four but not sure I think I am losing my mind.

You are welcome. I have made several batches since I saw the recipe for cake balls. Some turned out really good and others not so good. Not sure what the secret is. Maybe after a few more batches I will get it. One thing, make sure you don't get it too moist. I used the large end of a melon baller to get a uniform size. They were just right for popping in your mouth. Or taking a bite or two if you want them to last. lol
Hi...I just bought this cookbook and it gives some good recipes for cake scraps, including triffle, and cake croutons with banana suzette, etc. I will scan them and try to post them when I get a chance.

I just made the cake balls last night from my cake tops. I tell you I will do it everytime from now on. There are so good. My kids are not happy though, they usually get to eat them!!!!
I have just learned about using your scraps for cake balls, and I am going to try them this week. Does anyone freeze there cake scraps to use later, or do you need to use them while they are fresh. I usually don't have time to do other things until I am all finished with my cakes for the week. Thanks, Keli
I freeze my scraps until I have a good amount of scraps and then when I need to take a dessert to a dinner or something I make cake balls from them. It's great because someone always ask about them and then I say oh those I just make them from cake scraps from all the cakes I've been making lately. It usually always leads to an ohh I didn't know you made cakes.
