So it's been raining all day here. I've never had the weather really affect the way my cakes bake but today, everything I've baked did not rise as usual. 2 12inch marble cakes, 24 cupcakes and a loaf of pumpkin bread. Thank goodness everything is baked thru but just not as tall as usual. Blame it on the rain...

I always have found the science of baking fascinating, including how humidity affects the outcome of confections.

I have a lot more difficulty when making candy in those conditions, but have also noticed that my cakes don't rise as well either.

The weather and the altitude make a huge difference!!

I moved from Colorado to Washington State and I can not believe the difference moisture makes...My cakes always rise and come out very nice and I use the same recipe...

I tried to bake my daughter a birthday cake here last month and it was damp outside and my cake totally fell in the middle then the next try the cake fell apart when I took it out of the pan! so I had to go with cup cakes that were difficult as well took a couple batches to adjust..

But the Month before It was warm and dry here and I made a beautiful large Anniversary cake and it turned out perfect...I need to post a pic.

Moving from dry to damp hugely makes a difference! Weather is a bigger issue in baking than I ever realized... I totally understand...Bless your heart icon_smile.gif
