If you're doing tiered mini cakes, there is a pan that makes them in that shape - - 6 cavities, I believe. Or you can do a sheet cake and cut 2 and 3 inch "tiers" and put them together. Are you doing round or square?

They can be most any size you need for the # of servings.
4,6,8 is good. The only thing about cutting them out of one baked cake is it's hard to crumb coat and ice cut cake...so much chance of getting lots of crumbs in or tearing the cake.
If you melt your b'cream (warm in the micro for say 10 seconds per 1/3 to 1/2 cup) the pour it on the cake you have a better chance of not tearing the small tiers. You have to work very, very quickly spreading it all over the cake but I have covered cakes up to 12" w/melted b'cream. It dries very quickly - in seconds - so no need to wait for it to set up/dry.

they would be round..i was trying to find square so the icing part wouldnt be too bad. I would be freezing them tho so the crumbs wouldnt do bad also...the smallest pan i could find for a square was 4 inch.

Icing smaller rounds are way easier than icing smaller squares. I would stick with rounds, if I were you.

Since it's for a marriage ministry, am I correct in guessing that you'll want one cake per couple? In that case, you'll need to make the bottom tier at least a 3". If you want 3 tiers, I'd go with 4", 3" and 2". Kakeladi is right about the poured icing - - a LOT easier and so much faster.
