HI: Anybody have a recipe for a cookie icing that will go on smooth like RI does but will not dry hard and crunchy like RI? I want it to remain somewhat soft. Thanks for your hellp.

I use the rolled buttercream icing for cookies recipe from here on CC. It's really easy to work with and gives a much smoother surface than I can get from RI (because my RI skills are lacking, to say the least!) The recipe makes a huge amount and it freezes really well and takes color like a dream. So, I guess you can say that I like using it.

Hope this helps!

Try Toba Garrett's Glace - It finishes smooth/shiny and NOT crunchy. Just semi-hard with some chew to it.
