Can anyone tell me of any other ways to get a cake to bake evenly without using the bake even strips? I have used those before and I don't know if I am doing something wrong, but the sides seem to come out a little gooey. I tried baking a little longer and they still came out that way and the rest of the cake is overbaked. Please help!!!!

I put a flower nail in the middle of my pan, then pour the batter over it. If the cake is big you may need 2 flower nails. Just make sure to grease the flower nail as well so it will come out easy.

I started baking all of my cakes at 325 with a couple of rose nails is the middle and they come out really level now.

I bake all of my cakes at 300. It takes longer, but it works. Also, if your cakes are baking to the full height of your pan, when your cake is luke warm, but still in the pan, flip it upside down on a piece of parchment and let it finish cooling. I worked at a huge resort, and we did this with all of our cakes, and didn't have to top them.

i always fill my pans 2/3 full. When they're done and still hot, I just press the dome down with a clean towel so it's even with the sides of the pan. Works like a charm icon_wink.gif

Thanks all! I tried the rose nail technique, but it still domed on me. I haven't tried the others and will definately give it a try. I also read somewhere that if you fill a 9X13 pan with water and sit it on the bottom rack of the oven while baking a cake, the steam from the water will cause the cake to bake evenly. Has anyone else heard or tried this out?

Yeah, my mother has always told me to do it. Usually there is no need to, but sometimes I do it - using a smaller pan. It should also make the cake more moist (according to my Mom obviously - don't know).

I bake at 325, I dont have the bake strips so I use an old towel that I wet and wrap around the tin, my cakes have never been so level since I have done this
