I am making my first wedding cake in a few weeks, it will be a three tier square cake. I have two questions, what size pans should I use? It is going to be for about 65 people. Also, how do you get square cakes to be level and not droop on the corners? I always have problems with square cakes!

A 6, 8, and 10in square cake would serve 100 servings, if you serve the top cake. If the top tier is saved, then it's 82 servings.
I just did a couple of square wedding cakes too, and i found that using ganache under the fondant really helped in squaring it up.
