First Time Carrot Cake

I know this might sound odd but I am doing my very first carrot cake this weekend. It was never something we had in our family growing up and in ten years of making cakes for people nobody has ever requested one. I did a gift certificate at a benefit for my niece and the woman that won it is cashing in. I made one today as a practice... did I mention Ive never made cream cheese frosting either?! It tastes really good, I could definitely eat it all the time lol My problem is I dont know if it tastes like it should. The woman I am making it for is a huge food buff and ordered it from me "only because the man who makes the best carrot cake in the world is under the weather and couldn't". So I am nervous because if it doesnt turn out well, she is the type to make sure EVERYONE knows about it. I know its prob not easy to help thru forum and not tasting but any pointers would be helpful. I just dont know what its suppose to taste like!!!

I don't know what your's taste like but I can give you a great recipe for it and the cream cheese frosting.

I would appreciate that. My family is going to be sick of carrot cake by the time this order done I have a feeling! I dont know what a cream cheese recipe should entail. The one I found on here is cream cheese, butter, vanilla and confectioners. I can taste the cream cheese but is seems overly sugary. I added some more cream cheese to play, but I again am not sure what others expect it to be like. Thank you for any help!

Awwwe... I'm glad you like the carrot cake recipe Jan. I posted that recipe a long time ago. I found it on Food Network's website. I hate pineapple and raisins and nuts all that crap in a carrot cake. I know some love it, but I just don't. It is very good, bakes up beautifully and, like Jan said, is not heavy like a brick like some are.

There's a recipe on Allrecipes.com called Awesome Carrot Cake (just google it) - it is phenomenal. It is heavy though. But it has created an incredible reputation for me - people beg me to make this cake for them!
