Cupcake Cake Icing

Hello all! New to the forums...but not new to cupcake baking...as a just for fun. Never have done anything fancy with cupcakes, eventhough I would love to. And hope to one day. My question is: what is the best type of icing to use on a cupcake cake so you do not have the icing collasping between cupcakes. I made a cake last year for my son's 2 birthday, and had a hard time getting the icing between the cupcakes to stay there, without falling. All help and suggestions are very appreciated. Glad to be here, and ready to explore a whole different world of cupcakes.

Use a stiff buttercream, and crumb coat all the cupcakes together once they're arranged in your design, keeping everything in a fairly tight arrangement. Once that first coat of icing has set, you can move onto piping the rest of the details. In other words, the crumb coat should cover the cupcakes as if it were one cake. I use thin layer to begin with in white, and my piping easily covers that first coat of icing.

THANKS! I will try that. I am doing a trial run before his birthday in December to try and perfect what my plan is. It just happens to be John Deere themed party so I am thinking of idea. So you make your icing from scratch. That is something else I am trying, never done that before either.

Scratch icing is the only way to go. Especially for a design like a cupcake cake that needs to hold its shape. If you are used to canned icing, and your previous cake used that, it may well be the culprit. There are a lot of great recipes for buttercream here on CC. Good luck, and be sure and post a photo!

I am going to practice on a buttercream icing this weekend. icon_surprised.gif) I have the idea in my head, now to just transfer it to a cake......... Thanks for the help! icon_biggrin.gif

When I make cupcake cakes i usually arrange my cupcakes the way i want them and use pieces of left over cupcakes to fill in the gaps to prevent icing from sinking. Then i can use which ever icing the customer would like. Hope that helps!
