can I use jello mix to enhance the flavor of a cake?

Do you mean Jello gelatin? I wouldn't. If you mean Jello pudding mix, then YES! Not only does it enhance the flavor, it makes your cake moister. Use the instant kind. I do all the time!

You know - somehwere way back it seems to me Jello put out a cookbook that had at least one recipe that used Jello in a cake but I can't remembver for sure or know here to look for it.

My mom used to make a white cake then poke holes into the cake with a skewer, then pour dissolved jello over the top to sink down into the holes...strange that I'd remember that 40+ yrs later.
Anyway...
I use about 1-2 tablespoons of strawberry geletin (dry) in my strawberry cake. Adds a nice color without overly sweetening it.

Of all the different kinds of cake I make, my DH's favorite is the one his mom makes, like you mentioned! Lemon cake with the holes poked in and lime jello poured over the top!

I tried Jello - jello in a cake, and I couldn't get the "grittiness" out. It was like it didn't dissolve. However; Jello pudding works great! icon_smile.gif
